Hi. Can one contactless card be used to pay for more than one person (ie 3 adults) on the same journey?

No, you need three different cards. it's the same with oyster cards. if you tap down multiple times and you get stopped by an inspector then he'll only see one person's journey on it.

Hi im im london in july travelling across zone 1 and 2 for 3 days I see that the off peak day pass is £12 but is it right that if I use a contactless card the cap will allow me to travel off peak for far less

that's right, yes. it sounds daft the way they do it, but the daily cap for oyster and contactless cards is a lot lower than if you buy a 1-day travelcard
but you have to make sure you use the same card for every journey -- and remember to tap in and out at the end of each journey, otherwise it will charge you as if you were making a journey on the entire line (including every single zone)
